We here at Campbell & Syme do absolutely love a coffee that challenges your preconceptions, and makes you think twice when that sample tin is turned over during a blind cupping. This lot is one of those, a step away from your average Brazil, a creamy and rich delight, one to try and let it reform your opinions.
Luiz Paulo began the project of Santuário Sul in 2015. The sanctuary farm is a project that was born from a goal of being ahead of market trends. It is not easy to begin with plans to bring coffee from different regions of the world and to generate a new profile of Brazilian coffee, but Luiz Paulo had a vision to do just that.
The coffees that are grown here are reflections of the obstinacy of Luiz Paulo and his partners. Today, in addition to the traditional Brazilian varieties (like yellow bourbon), the farm has more than 30 exotic varieties of coffee, differentiated cultivation practices (such as shade plantation) and innovative processing techniques.
The varieties planted here are monitored closely to be able to offer the best result within the climatic conditions of the region. In addition, Luiz Paulo himself makes sure to always taste the first samples of each of these coffees. For the next few years, Luiz Paulo has no doubt: “The goal is to always be at the forefront of the market and offer more and more quality!” So far, the farm has acquired some special positions in the market, being recognised for the quality and for being pioneers in the industry. The first two harvests with the new varietals and processes were important for the initial new flavours to be recognised by customers and judges within the industry alike.
