Produced at Israel’s private farm at extremely high altitude, this coffee has gone through semi-carbonic maceration. The coffee was loaded into tanks for 36 hrs. The coffee on top of the tank crushes coffees on the bottom, releasing CO2 and creating an anaerobic environment influencing the coffee’s flavour.
