Ibiraci is known as the Minas part of the Alta Mogiano region. Although Ibiraci is designated as part of the Alta Mogiana region Cofinet separated it out as a separate micro region due to it exhibiting distinct characteristics in terms of cup profile.
Ibiraci is a region that is characterised by its higher altitude compared to the surrounding areas, featuring a flat plateau that yields excellent quality. Additionally, the notable presence of family run farms is a highlight, fostering a transformative movement focused on improving quality, technology and innovation.
This particular lot is from a group of Ibiraci smallholders. It has been meticulously sorted to be part of a speciality peaberry selection. Following the sorting process, the coffee was sun-dried for a period of 6 days, which was the optimum for the conditions to achieve the ideal moisture level.
WHAT IS A PEABERRY?
Inside most coffee cherries, you find two beans / seeds (flat on one side where they face each other and then round backs facing outwards). PB or peaberries make up to 5-10% of harvest and occur as a result of a mutation. Once one ovule fails to pollinate, extra space inside of the cherry offers the other seed to grow larger and rounder.
Sometimes peaberries are considered superior as a single bean doesn't share the nutrients with the other seed, from our experience the peaberries are generally a touch sweeter and jammier.
