Segundo Cruz Garcia, along with his wife Priscila, own the 2 and a half hectare farm El Cedro in the El Cautivo area of La Coipa. El Cedro is mostly planted with yellow and red caturra, with some pache and typica, and sits at 1850masl.
El Cautivo is one of the best quality areas of La Coipa, since it is very high altitude and has a very unique micro-climate that gives the cup a very distinctive berry, citrus and buttery profile. This year Segundo has been focusing on improving the quality of his coffee, since the farm has so much potential but he had never managed to reach above an 84 cup score.
Falcon provided Segundo with training on picking, processing and drying, which improved the quality and consistency and reduced the incidents of defects in the coffee.
