José Antônio Pasti owns the 33-hectare farm Sitio das Nascentes, where he grows 14 hectares of Red and Yellow Catuai coffee. The farm has been in the family for more than 80 years, starting with José Antônio's grandfather Pedro Paste Neto. Since the beginning, the family has been concerned about the impact of farming on the environment, and has reserved about 30 percent of the land for conservation and forest preserve. There are natural reservoirs and fresh-water springs on the property. Sitio das Nascentes is a rare Brazilian farm that produces Washed coffees: They use mechanical demucilagers to remove the fruit from the seeds before spreading the coffee on covered patios to dry, being sure to rotate the coffee consistently throughout the day. The coffee is picked selectively, sorted, and processed at a neighbor's depulping facility.
Starting in 2005, Sitio das Nascentes focuses primarily on specialty coffees, and the entire family is committed to improving the process through educaton and increased efficiency.
