If you have bought coffee from us for a while, then you will know we do like to bring in a few higher scoring Brazilians through out the year, ones that buck the trend. At least this is how it used to feel, but now with a plethora of wonderful Brazils arriving over the last few years, now it is much more common place. Whether you have an opinion or not, we welcome you to sit back and enjoy the brew with an open mind. This is the second exceptional, and "step away from your average", Brazilian lot of this harvest -already and it is just January! This Yellow Bourbon has high sweetness and complexity, juicy and sugary pear leads the way, with oh so smooth milk chocolate and caramelised almonds. A mellow tropical fruit note takes over and lingers for a long star fruit finish.

 

EDUARDO PINHEIRO

Eduardo is the third generation of a family passionate about coffee. His name carries the mark of tradition and has already become a reference to coffee quality in the area. The rigor in the processes and the constant search for excellence in production make the beans of Fazenda Dona Nenem and São João Grande true gems, pioneering specialty coffee in Brazil. Eduardo has a very differentiated post-harvest structure on his farm based on research in partnership with local universities.  

This yellow Bourbon was harvested with a high percentage of perfectly ripe cherries. The cherries were pulped and taken to stainless steel tanks and kept fermenting in the reactor for 48 hours, being turned daily inside a hermetically sealed container. 

After fermentation, the batch was taken to a suspended terrace and was slowly dried with shade cover for 22 days.
