We have been enjoying a lovely year, filled with lots of new wholesale relationships and as a result this week (in early July) we have had to remove Evanete Peres from our offer list and online offering. We do this to make sure all our fantastic partners serving this up as their house coffee can continue to do so, with a continuous supply throughout the year until the fresh harvest arrives. We had seen this coming a few months ago, and so since then have been on the pursuit for a lot that will fill in and offer a fantastic replacement and similar profile to all our other customers. Incomes Saravá. The cup profile is similar to Evanete in that it leans into the sweet and smooth milk chocolate with fruits. The cup is rounded and smooth, with a creamy low lying tropical acidity, melon notes through out the cup with the sweet and buttery nutty flavour of pecans adding depth. A more than worthy fill in, and one we are sure you are going to enjoy brewing up.
SARAVÁ
The Natural Sarava Lot is an exceptional blend of naturally processed coffees. The coffees are grown at altitudes between 1000-1150 masl. Produced by the Urban family, a traditional coffee farming family of both first and second generations, the father and his older children own a 1755 hectare farm, Rio Brilhante. Of this, 840 hectares are dedicated to coffee production, and 566 hectares are set aside for preservation. The family impacts the local economy by employing 87 local workers and 199 temporary workers. The farm is located in the Coromandel municipality of Minas Gerais, where various coffee varieties are produced, including Catuaí 99, Catuaí 144, and more exotic varieties such as Arara and Topázio.
This coffee is picked using coffee machines and then hand-sorted to select the best cherries. Cherries that are part of our SARAVÁ lot are transferred to a concrete patio for 8 days to sun-dry, then moved to rotary dryers for 40 hours to finish the drying process. The lot is a blend of Arara and Catuaí 62 varieties. Rio Brilhante is not just a coffee farm; the Urban family views it as a business project focused on impacting the coffee community and their families, mitigating climate change
